I cannot believe this is my first cupcake recipe on the blog. Those who have known me in the past several years have probably tasted my cupcakes. A few years ago, I jumped on the cupcake bandwagon and haven’t looked back since. It started with trying Paula Deen’s recipe for Red Velvet Cupcakes (see the cake pops I made with them here)…and how can you go wrong with Paula!
I made these cupcakes a few weeks back for the Halloween party we went to. And side note – I entered the picture of our costumes into a Halloween Costume Contest The Counter was having and I found out yesterday we won 1st place for the Del Mar location! Yay! If you haven’t be to The Counter yet….you should – it is delish (and they catered the Burger Bar at our wedding…see below!)
Anyways – back to cupcakes…I was coming back from a week of traveling and wanted something that was easy, but not your typical cupcake. I found this recipe from Six Sisters’ Stuff and thought it would be perfect. I topped it off with the cream cheese frosting from Paula. To get the orange color I actually used the gel icing food coloring because it seems to create a richer color than the little food coloring drops.
Since you use a full brownie mix and a full cake mix, you can obviously get more than your typical 24 cupcakes per batch. I even had extra cake batter so I made some mini cupcakes. Those are always a hit at parties because they’re so easy to snack on
Even though I made these for Halloween, these would totally work at Thanksgiving too. And just about any other occasion too if you just switched the food coloring.
