Wow…seems like Valentine’s day really just snuck up on me. Feels like only yesterday it was Christmas. I do have to say I’m excited for it to be Valentine’s day because that means we’re closer to spring and that means longer days. I hate that it gets dark so earlier in the winter. I wish it would stay late until 7 or 8ish everyday. I feel like I’m so much more productive when it’s light out :)
So the sunlight is going to be my excuse for not getting all the Valentine’s crafts and recipes done I had wanted. I never made the Valentine’s mantle I envisioned. I never put together the sign I bought supplies for to hang on the door. And I definitely bought ingredients for things that I never made. Oh well, there’s always next year, right :)

But don’t worry – I do have one more Valentine’s day recipe for you today. And, heck, there’s no reason these can’t be made year-round as well.
My brother-in-law got me a gift card to Williams-Sonoma for Christmas and I felt like a kid in a candy store picking out what I wanted to spend it on. One of the things I bought was this brownie bite pan. If you’ve been following, The Pink Flour for awhile now you know I love making “mini” things, so this pan was up my alley.

My first attempt using the pan wasn’t a complete failure, but it also wasn’t as successful as I had hoped. I filled the squares a little too much and when they baked spilled over the sides. The second time I made these I made sure not too fill too much and they turned out exactly how I wanted. The squares to the left are the ones filled and the ones on the right are before I put the second layer of brownie batter. Gives you an idea how much I ended up filling them – the candies were covered, but not to the top of the candy.

I found the Strawberry Three Musketeers minis at Target and thought they would be perfect for these brownie bites.

Strawberry Two-Bite Brownies Recipe
A few notes about this recipe:
  • I also tried a few with some Caramel Hershey’s Kisses – those were super yummy too! I did try them with Lindt chocolate truffles and the chocolate melted too much and made a mess, so I wouldn’t suggest those, but I’m sure other candies would work. What’s great is you can always just try it in one bite and see how it turns out without wasting all the batter :)
  • I love my Williams Sonoma pan, but I realize most people probably don’t have one. I don’t see what a mini muffin pan wouldn’t work just as well.
  • I cooked my brownie for about 20 minutes, but depending upon the pan you are using and how your oven cooks you may need to adjust the time. I would start checking this about 5 minutes before they are done.
  • Make sure to let the brownies cool before removing from pan. They’re much easier to get out when cooled. I used a butter knife to lift them out with no problems.
