White Chocolate Cookie Dough Brownie Bars {Guest Post from The Doctorate Housewife}

 I’m really excited to be posting here on The Pink Flour. Megan has some amazing recipes and DIY projects. In a way, what I have to share with you is both – it’s assembling and it’s baking, and it yields a pretty awesome treat. It’s got a white chocolate cookie bottom, a light fudgey brownie middle, and a cookie dough frosting – yeah, I went there =) It was one of those things really- one of those times when you’ve signed up to make dessert for an event; you don’t have time to go to the store; and so you just have to go with what’s in your cupboard. I fancied chocolate, but also wanted cookie dough. But then again I wanted something crunchy. No inspiration was coming and I was running out of time. I opened the fridge; I closed the fridge; I stared at my cookbook drawer and dared the baking pans to inspire me. But nothing came, nothing, nothing… and then it just kinda clicked into place, a way for me to have it all… Check it out:

First I crushed up the cookies, melted some white chocolate, and mixed them together to line the bottom of the pan.
Then I mixed up this fat-free brownie recipe. Best “light” brownie recipe I’ve tried.
After they went in the oven, I stirred up some cookie dough frosting. Wow it was hard not to eat it all with a spoon.
And voilà dessert bars to take to our dinner. They were a big hit – or at least I took home an empty plate…
yum yum yum yum – get in my face!

Here’s what you need:

  • tea biscuits (or vanilla flavoured cookie of choice)
  • 150g of white chocolate
  • 2 containers of fat free greek yoghurt
  • 3/4 cup flour
  • 2 tsp corn flour
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp vanilla
  • 3/4 cup brown sugar
  • 1/4 cup stevia
  • COOKIE DOUGH FROSTING modified from the Cookie Dough Lover’s Cookbook – all the rage right now, for good reason!
  • 1/2 cup light butter
  • 1/2 cup brown sugar
  • 1/2 cup powdered sugar
  • 1/2 cup flour
  • 1/4 tsp salt
  • 1/4 cup heavy cream
  • 1 tsp vanilla
  • white chocolate for shaving

Here’s what you do:

  1. Heat oven to 160C. Crush cookies in food processor. Melt white chocolate. Add to food processor and pulse till combined.
  2. Line 8×8 pan with foil. Press cookie mix onto bottom of pan.
  3. Start mixing up your brownies: Mix dry ingredients, add yoghurt and vanilla. Dough will be thick, persist with your wooden spoon till combined. Add to pan. Bake for 25 min.
  4. While brownies are baking, prepare the cookie dough: beat brown sugar and butter until light and fluffy. Mix in flour, powdered sugar, and salt. Slowly add cream and vanilla until fluffy.
  5. Once brownies have mostly cooled spread frosting over the brownies. Grate white chocolate over the top, cut, and serve.
