Today, I’m sharing the Mint Oreo Chocolate Cupcakes I made for my husband last week. You probably saw the yummy milkshake I made for him, but I still had to make him cake for his birthday :)
Another one of his favorite flavors is mint and we were on a little bit of an Oreo kick, so I wanted to combine the two. Once I remembered there were mint Oreos, I was sold.

I think my favorite part is the Oreo hidden in the bottom – gives it a different texture and a punch of mint flavor. I love this cake recipe because it takes a box mix and doctors it up to make it nice and moist. 
To make the frosting, I used a Frosting Creations Packet from Duncan Hines. I added that to my standard buttercream recipe and it replaced flavoring and food coloring…score!

Mint Oreo Chocolate Cupcakes

(makes 24 cupcakes)

For the cake:
1 box Chocolate Cake Mix
1 small box (3.9oz) Chocolate Instant Pudding
1 cup vegetable oil
3/4 cup milk
4 eggs
24 Cool Mint Oreos
  1. Preheat oven to 350 degrees (or 325 degrees for convention oven) and line muffin pans with cupcake liners.
  2. Place one Cool Mint Oreo in the bottom of each cupcake liner.
  3. In medium bowl combine cake mix, chocolate pudding, vegetable oil, milk and eggs.
  4. Beat with electric mixer until incorporated and then continue mixing 1-2 minutes.
  5. Scoop batter over top of Oreos in cupcake liner.
  6. Bake for 20-22 minutes or until toothpick inserted in center comes out clean.
  7. Let cupcakes cool in pans for 5 minutes, then remove to wire racks to finish cooling.
  8. Frost cupcakes by filling a pastry bag with tip (or ziploc bag) and pipe on the frosting. Top with an Oreo cut in half.

Mint Chocolate Buttercream Frosting


1 cup unsalted butter, softened
4 cups powedered sugar
2 Tbsp heavy cream
1 packet Mint Chocolate Frosting Creations
4 Mint Oreos, crushed

For the frosting, beat butter for 3-5 minutes. Add powdered sugar, flavor packet, and cream. Beat for 3-5 minutes until fluffy. Add in crushed Oreos and stir until combined.
