Lemonade Cookies - an easy way to turn an ordinary cake mix into delicious lemon cookies!

I’m so excited to share these cookies with you today . Since the arrival of our son, I haven’t been able to do as much baking as I would like (which I knew would probably happen), so when I do have an opportunity I need something that won’t leave me in the kitchen for too long. These Lemonade Cookies are so easy and simple to make – I was able to sneak away to make them while my husband was on baby duty!

If you can follow the instructions on the back of a cake mix box, I guarantee you’ll be able to make these cookies.

My favorite part of these cookies is the glaze that gets drizzled on them soon after they come out of the oven. It makes them almost into little pieces of cake – SO good!

Lemonade Cookies - an easy way to transform an ordinary cake mix  into yummy lemon cookies topped with a sweet glaze

Lemonade Cookies

1 pkg. lemon cake mix
1/3 cup vegetable oil
2 eggs
1 tbsp. lemonade
1 cup powdered sugar
2 tbsp. lemonade
1 tsp. lemon zest

For cookies

1. Preheat oven to 350 degrees. In a mixing bowl, mix together the cake mix, oil, eggs, and 1 tablespoon of lemonade. The dough will be sticky.

2. Drop dough in 1 inch balls onto a cookie sheet covered with parchment paper.

3. Bake for 10-12 minutes.

For glaze

1. In a small bowl, combine powdered sugar, 2 tablespoons of lemonade, and lemon zest until smooth.

2. When the cookies come out of the oven, let rest on cookie sheet for a minute and then transfer to a wire cooling rack and drizzle with glaze. Let the cookies cool, or eat them warm :)
